Ingredients
  

  • 8 ripe tomatoes, halved
  • 1 large onion, sliced
  • 6 garlic cloves
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • ½ cup fresh basil leaves
  • ½ cup fresh cream (optional)
  • Salt to taste
  • Black pepper to taste
  • ½ teaspoon dried oregano

Method
 

  1. Preheat the oven to 200°C (400°F).
  2. Arrange tomatoes, onion, and garlic on a baking tray.
  3. Drizzle with olive oil and roast for 30–35 minutes until soft and lightly caramelized.
  4. Transfer the roasted vegetables to a large saucepan.
  5. Add vegetable broth, basil leaves, oregano, salt, and pepper.
  6. Simmer for 10 minutes.
  7. Blend until smooth using a blender or immersion blender.
  8. Stir in fresh cream if using.
  9. Let the soup cool completely.
  10. Divide evenly into the four compartments of your silicone storage container.
  11. Cover with the lid and refrigerate or freeze.

Notes

  • For a vegan version, omit the cream or use coconut cream.
  • Garnish with fresh basil and cracked black pepper before serving.
  • Add grilled cheese on the side for a complete meal.
