Ingredients
  

  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 medium carrot, grated
  • 4 cups broccoli florets
  • 3 cups vegetable broth
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 2 tablespoons all-purpose flour
  • Salt to taste
  • Black pepper to taste
  • ½ teaspoon paprika (optional)

Method
 

  1. Melt butter in a large pot over medium heat.
  2. Sauté onion and garlic until fragrant.
  3. .Add grated carrot and broccoli florets.
  4. Sprinkle flour over the vegetables and stir for one minute.
  5. Slowly pour in the vegetable broth while stirring continuously.
  6. Simmer for 15–20 minutes until the broccoli is tender.
  7. Blend half of the soup for a creamier texture, leaving some broccoli chunks.
  8. Add milk and heavy cream, then stir well.
  9. Gradually mix in the cheddar cheese until fully melted.
  10. Season with salt, pepper, and paprika.
  11. Let the soup cool completely.
  12. Divide evenly into the four compartments of your silicone storage container, cover with the lid, and refrigerate or freeze.

Notes

  • Use freshly grated cheddar for the smoothest texture.
  • Blend more or less depending on your preferred consistency.
  • Garnish with extra cheddar cheese and fresh parsley before serving.
